What is acorn ham?

Acorn-fed Iberian ham is a type of ham from the Iberian Peninsula that comes from 100% Iberian pigs; which are fed with acorns.

How to know if the Iberian ham is acorn-fed?

When differentiating an acorn-fed Iberian ham from another piece of ham, you must take into consideration the following:

  • The labels on the ham must be black (acorn-fed 100% Iberian ham) or red (acorn-fed ham with 50% purebred).
  • The shaft (the part of the ham that joins the hoof area with the rest of the meat) must be narrow.
  • The legs should be long and slim.
  • The piece must have a V-cut where the reed ends  and  the hooves are black.

How are the slices of a good 100% Iberian acorn-fed ham?

  • The slices cannot be uniform

Knowing how to cut a piece of acorn-fed ham implies taking advantage of it and not wasting it, which is why it is vital to have the right tools and to find out in advance about how to cut the ham.

How to cut acorn ham?

Once you have your piece of acorn-fed Iberian ham, you have to cut it. But don’t worry, we will show you how to do it:

  1. Depending on the frequency of consumption of the ham, it can be placed on the table in different ways. If consumption is immediate, place the hoof up, if it is longer it will go down.
  1. Make a deep cut in the stem of the ham, removing the crust and the outer yellow bacon.
  1. Make the first slices, always keeping the axis of the cut horizontal.
  1. When you reach the hip, make an incision around the bone. Set it aside and continue cutting at the tip, keeping the horizontal direction.
  1. Finally, turn the ham over and cut the stifle. Then extract the hock by cutting it into cubes.
